Why I'm Vegan |
I went whole food plant-based vegan because my body was breaking down from years of neglect by eating rich foods and drinking sugar-laced drinks. My wife was in love with American foods coming here from Peru as a Japanese (Okinawan) descendent. She developed Cholangio Carcinoma after suffering from years of inflammatory issues. We had no idea why. After researching alternative treatments for cancer I became more convinced that unethical meat and sugar-laced prepared foods diet was causing a lot of the disease in this country. The way humans consume animal-based foods grilled and fried in oil is a huge red flag. When you are younger it matters very little. As you age and have a life-altering event happen such as losing your partner you dearly love, I was determined to fight back in her honor. After reading some cancer reversal books I went on to eat vegan. I then took T.Colin Campbell's certification course at Cornell University and it was an eye-opener. Just a wealth of information and so many resources to explore. I found out about Dr. Caldwell Esselystyn and Dr. Micheal Greger of food nutrition facts.org I had high blood pressure and cholesterol and was overweight. I lost about 40 lbs from 225 to 185. And I took the Forks Over Knives online cooking course in 2020 and have been able to parlay that into my heart disease reversal Esselstyn plan. I am very happy I did this, and I know she would be proud. |

More About Me |
I have traveled a road that has been filled with many fun days that I thought would never end. I have been in the hospitality industry all my life. Took hotel restaurant management and some business management courses in college. Currently, I am not working post-Covid because I am a full-time caregiver for my elderly parents who are aging in place in the family home a half-hour from my house here in Loudoun County Virginia. My wife and I were best friends, lovers, and she knew me better than I knew me. She was my soul mate. Since we lost the fight against cancer, I have taken grief therapy group meetings until Covid and then Zoom. I took up TMD Transcendental Meditation and it has been a gift from her I feel. It really helps me process my stress and grief. Keeps me grounded and helps me control the emotions of loss and angst. I had finally found my "why". Before I met my wife I was happy being single, was younger, and full of good times and cheer. I met hundreds of interesting people from all walks of life. The experiences and stories could fill up a bookshelf. I outgrew all of that when I shifted into the fine-dining part of the hospitality industry. Money was good, I was independent, started my own IRA, got my wine education, and can sell wine with the "somms" of the world. I had been mentioned for positive reviews in newspapers for great knowledgeable service. I worked in an Italian fine dining restaurant that paid for the down payment on our townhouse. Life was getting better and I was becoming more aware. I met my wife at the restaurant she was the sister of my co-worker and just came from helping her Mom in Peru who had a stroke. She came back to the states to work as a dental assistant when she started working nights in the coat check. It was an attraction that sprang into love. Since she passed I went into a shell I did not even think about finding anyone else. And to be honest I am fine if I do not. But as I come to a crossroads in my recovery, I feel it's important to reconnect with the outside world. To find my new journey. That's all the more meaningful as I am giving my two elderly Parkinsons riddled parents in-home care because of Covid and my Mom's fear of nursing homes. So that's a peak. I have nothing to hide and all to gain. |
